Yesterday was my birthday. Hold the applause. I’m not too big on my birthday. If my mother, my husband and my facebook hadn’t reminded me, I don’t think I would have a clue how old I am. I definitely don’t feel my age but I feel like my birthday becomes less and less of a big deal as I age. With over 300 facebook greetings, I can hardly say that it feels small. I definitely feel the love from friends dropping me a line and especially from my dearies who go out of their way to do something special for me. As many people know, I’m a pretty tough broad. I always have a lot going on in my life and I deal, for better or worse. Whether it’s a good or a bad day for me, I always do a great job at work. It’s a Jolly Holiday with Cari!
Epic Weekend Fail
A quick update, folks!
I was determined to spend my weekend being productive, playing around with some new music and baking. Yes I’m having a cookie swap and I make tons of cookies for friends and family alike. And they are tasty. I can always make a delicious cookie. I am a great baker and chef alike. BUT this weekend was a major setback by way of French Macarons. 4 batches, folks. I quit.
1st Batch: Gorgeous and even had feet! I tried to peel them off the sheet to no avail. Undercooked.
2nd Batch: No feet and sticky. Maybe not enough rest time?
3rd Batch: Awful. Flat. Undercooked. I added lemon juice and i think that killed them.
4th Batch: Tasty as regular cookies but didn’t have feet. Definitely overwhipped my egg whites.
The good news is that I’m identifying the issues. Bad news? I’m losing confidence and want to quit this! LOL! I made a promise to myself I would master them. I gotta do it even though there are much bigger tragedies than French Macarons. More good news is that I made Hubs peanut butter chip cookies and he has eaten almost all of them already. I also made and froze thumbprints that were quite tasty. All in due time. Finish what you start and focus in. Keep on keeping on.
BRIDE GUIDE: From the desk of a Wedding Officiant
I was raised Catholic. I went to Sunday school. I went to church, the later the better. I even went to all girl’s Catholic high school. I led the choir in song every First Friday of the month. I was raised with religion and I always dreamed of it being a part of my wedding day. I wanted to walk down the aisle of a beautiful church with stained glass windows and incense burning, with a fun-loving priest giving joyous blessings to this everlasting love that my husband and I shared.
This was not how it all went down. And I couldn’t be happier about it.

There is no avoiding it. As I hum the popular 80s tune in my head, I feel anxious, fidgety, and ready to go home already. It’s definitely Monday on this breezy Tuesday morning.
